Arrow Garlic Feta Chicken

I was sifting through my recipe collections looking for new low carb ideas - I had forgotten all about this recipe. It is surprisingly wonderful considering the small number of ingredients and the amount of effort.

Garlic Feta Chicken

1 cup sour cream
3 cloves garlic, crushed
1 Tablespoon chopped fresh rosemary
4 boneless skinless chicken breasts
1/2 cup feta cheese

Mix the sour cream, garlic & rosemary together. Add the chicken, thoroughly coating each piece with the mixture. Place in fridge overnight, up to 24 hours (using a large ziploc baggie makes for easy cleanup)

Preheat broiler. Crumble feta.

Broil the chicken approx 5-7 minutes per side, or until cooked through. Remove from oven & top each piece with crumbled feta. Return to broiler for approx. 1 minute, until feta begins to melt & just starts to turn brown.

Per Serving (4): 438 Calories; 19g Fat (40.3% calories from fat); 59g Protein; 4g Carbohydrate; trace Dietary Fiber; 179mg Cholesterol; 394mg Sodium.

Thanks so much for the recipe, I just took some chicken out and will defiantly make this tomorrow! I love feta cheese!

Thanks for the recipe!! I, too, made this - with a little modification, of course! I couldn't bear the thought of wasting all that sour cream, so I scooped it into a small saucepan and heated it gradually on the stove, stirring frequently (I was afraid it would curdle).. Anyway, when the chicken was ready, I transferred it to a plate and poured the drippings from the broiler pan into my "sauce".. added flavour with the chicken juices and feta. It was good!
