Default Saturday Morning Pancakes

These are really good and there's no funky Carbquik taste.

Saturday Morning Pancakes

1 cup Carbquik
1-1/2 cups almond flour
2 teaspoons baking powder
1/2-teaspoon baking soda
4 tablespoons Splenda
1/4-teaspoon salt
2 eggs
1/2 stick melted butter
2 tablespoons vegetable oil
1/3-cup sour cream
1-tablespoon vinegar
Enough LC milk to make 1 cup

Place dry ingredients into a mixing bowl and mix to combine. Add the eggs, butter and oil to the bowl.

In a 1 cup measuring cup place the sour cream, vinegar and then add enough LC milk to make one cup, add the mixture to the bowl and stir with a wire whisk until combined.

Allow the batter to sit and thicken while you heat up your griddle. Cook the pancakes on a well-heated griddle over med-low heat. You want to allow the pancake to set well (it should have lost it’s shine on the top) before you try to turn them.

I will have to try these. I just bought the kids the pancakes that you microwave and they smell soooo good. So I need a substitute.

Glad I'm not the only one who thinks carbquick can have a "funky" taste. Sometimes it does sometimes it doesn't just depends on the day with me I guess.

how many pancakes does this make and do youhave the carb count for the entire recipe?
