I suppose it depends on what recipe you are trying to replace bread crumbs in. For fried chicken, finely crush some pork rinds, mix some parmesian cheese (and any spices you wish), and use as a breading. For meatloaf, you can also pork rinds for a binder.

I've also heard of soy or almond flour being used. There is even a recipe for french toast made from pork rinds!

I've had good luck with straight parmesan cheese (the cheap green can kind. ), or a half-and-half mix of parmesan cheese and textured soy protein. Look for Bob's Red Mill TVP (Textured Vegetable Protein) in the bakery aisle, or check your health food store. TVP/TSP is soy granules, the solids that are left over after making soy sauce, dried into puffed granules. Some folks add some moisture to them to make a sort of meal, like grits, but I prefer to use them dry as a breadcrumb substitute.

I also use crushed pig skins. They stink when you open the bag, but once you cook with them they are great. I have even used them in cinnamon flavored french toast minus the bread. Anyway--crush them very fine and you can fry chicken , fish etc.. Can also use them in meatloaf instead of the breadcrumbs. Good luck and happy eating. Aleka ps. If using them to fry with --roll meat in an egg wash first before rolling in the pig skins.
