Default Stuffed Zucchini Boats

~Stacy's Stuffed Zucchini Boats~

You Need:
4 or more medium sized zucchini, 2 Tbs. fat free sour cream,
2 Tbs. melted butter, 1/4 C. low fat cottage cheese,
salt, pepper, 1/4 C. grated parm. cheese, 2 Tbs. of whole
wheat bread crumbs..{Just make yourself with Low Carb. whole wheat bread.} We use Sara Lee..

Scrub Zucchini. Cook in a large pot with boiling water to cover
for 15 mins. Drain and cool.

Preheat oven to 350'.
Slice off top 1/3 lengthwise & discard tops..
Scoop out pulp to form boats..Place pulp in a strainer; drain
and press dry.

Combine pulp, with sour cream, butter, cottage cheese, salt, & pepper.
MIX WELL..

Spoon into zucchini boats.
Spay a baking dish with cooking spray. Add Boats.
Sprinkle with parm. cheese and crumbs.
BAKE for 15 mins. or until heated through and filling
is golden brown. YUMMO!

Sounds yummy! I love grilled and sauteed zuchinni. Do these turn out mushy though???

Baking them probably keeps the zucchini from getting mushy. Fried ones get almost jellied. But I LOVE them that way.
