Hello all
If you love carrot cake, try this...
3/4 cup protein powder
1/4 cup glutin flour
1/2 cup chopped walnuts
1 ts baking soda
pinch of salt
one cup grated zuccinni
1/2 cup grated carrrot
2/3 cup oil
1/4 cup splenda
1/4 cup liquid sugar twin
2 ts cinnamen
1/2 ts nutmeg
2 eggs
Mix and cook for 20 minutes or so (really watch so it doesn't dry out) at 350. I cooked it at 325 in a convection oven. It dries out very quickly.
Beat 1/4 cup butter with 3/4 cup cream cheese and some liquid sugar twin for the icing.
I adapted this recipe out of another posted recipe here to lower the carbs by using zucinnni and sugar twin. I think the zuccinni helps keep it moist.
This is the most unbelievable cake I've eated since LC 4 years ago! I fed it to my teenagers and no one in our house can believe it's LC. It's extremely moist, fragrent, everything you'd expect in a 'normal' carrot cake. I'm in heaven.
With this, I can LC for life, no problem!
