Default Pumpkin soup recipe

Hi

I'm craving pumpkin soup...yummy, creamy, pumpkin soup.

YES, I did a search on the search engine. Found a southwest pumpkin soup.

YES, I looked through the other 2 low-carb recipe sites. I just found one that was with macadamia nuts.

I had some at a restaurant in California, it was to DIE for. Creamy, some cinnamon, nutmeg...I remember it sort of like the pumpkin pie of soups.

It's cool and rainy here in NY, and I'm craving soup. I'm learning to cook with this new WOE, so easier recipes are better. I haven't yet searched for cauliflower or squash soups, but I plan to.

Anyway...I did try to find it myself first, just wanted you to know :-)
Anybody have any ideas??

Kristine posted a recipe for Curried Squash Soup .. I'm sure you could substitute pumpkin with happy results.

I would make it with half pumpkin and half cauliflower. There are other squash that make better soup like butternut, Delicata or cheesecake pumpkin. Jack 'o' Lantern type pumpkins are pretty watery. Alternatively, you could use canned pumpkin.

Here's my recipe for Basic Cream Soup. Start by sauteeing onions in butter until soft and then add the rest of the ingredients. Don't use the recommended seasonings and add cinnamon and nutmeg to taste. Puree and finish it off with a splash of cream.

Hi Karen
Did you mean - substitute half the cauli with pumpkin and leave out the broccoli altogether from the basic recipe?

The Atkins site recipe section has a curried pumpkin soup made from canned pumpkin that I am going to try one day this week, it sounds wonderful...hope it is...if you can't find it..I can send it to you by cut and paste...I saved it to my computer
