Default no bake chocolate oatmeal cookies

remember these cookies from when we were kids?its so simple i decided to whip them up low carb tonight

2 cups splenda
2 sticks butter-unsalted
1/2 cup cocoa
1/2 cup peanut butter
1/4 cup no sugar coconut{optional}
1 tsp vanilla
3 cups keto oatmeal
1/2 cup whippimg cream


mix cocoa,splenda,butter,whipping cream in a pot,bring to a rolling boil for 1 minute.remove from heat add vanilla,peanut butter,coconut,oat meal.
drop by tsp on wax paper.makes about 30 cookies.ENJOY!!

I made these and they are good. However, the recipe above is somewhat too chocolately for me. When I used to make a carb version of the cookies, it had ony 3 tablespoons of cocoa for every 2 cups sugar and 3 cups oatmeal. When I make this again, I'm going to cut back on the cocoa.

Making the recipe above with the optional coconut, I ended up with 36 cookies. I calculate about 3 g carb (ECC) per cookie and 120 calories.

the oatmeal i used is called keto hot cereal,old fashioned oatmeal, and i found it at a local health food grocery store,called basic foods.

thanks- was going to make them, but was waiting on oaty question. I'll have to go hunt some down. I have the strawberries/cream keto cereal-uh- don't think that would work! Ha

Oh they look so good and just like the ones we used to make. I will have to try these. I am going to stop at the health food store on the way home.
