Default Cheesy Joe Breakfast Skillet

I've been reading a bunch of cookbooks lately, and almost all of them have a recipe for "Joe" - a gound beef, egg, and spinach concoction that was created in San Fran back in the '30s. I came up with my own version this morning that I am *in love* with! You may like it too:

Cheesy Joe Breakfast Skillet

1 lb lean ground beef
1 tablespoon minced garlic
Salt and pepper to taste
1 (6-oz) bag fresh baby spinach
5 large eggs
4 oz shredded cheddar or Colby

Mist a large skillet with oil of choice and begin to brown the ground beef. Add in the garlic. Continue to brown meat, stir often. Add in the salt and pepper. Layer the baby spinach on top of the meat and cover; allow to cook about 5 minutes or until the spinach has wilted. Carefully combine the spinach with the beef.

In a small bowl, whisk together the eggs. Pour the eggs into the skillet and stir into the beef and spinach. Allow to cook for a few minutes while stirring often. When the eggs are about set, stir in the cheese. Combine all ingredients and cook until you get a casserole-type consistency.

Yield: 4 servings

Per serving info according to Fitday PC:

Calories: 353
Fat: 20
Carbs: 3
Fiber: 1
Protein: 39

It made 4 very large and very filling servings! I was very happy with it.

This sounds great. Do you drain the grease from the meat?

I used very lean meat so I did not. If you use ground chuck or the like, I would.

I finally got a chance to try this out. It's a little impractical to make a serving for one, but I had some leftover meatloaf that I crumbled up. I used leftover pan fat from the meatloaf as my 'oil of choice', a slice of meatloaf which was the equivalent of 1/4 lb of beef, 1 scrambled egg plus a bit of cream, 1 oz shredded cheese, and about 2 cups of baby spinach.

It's outstanding! I'm going to save the rest of my meatloaf to do it again tomorrow.

I added a good squirt of LC ketchup... talk about comfort food.

Thanks for bumping this up, Kristine. I've not had this in a while, but have everything to make it in the fridge for later this week.

Yep. I'd thaw and squeeze it first though.

OH MY!!! This was fabulous, DH & I had it for breakfast this morning. I had no cheddar or Colby though, so we used Edam...this will also make an easy lunch or dinner! Thanks for sharing your recipe!
