Default Veggies in the stew

This question is going to reveal my total lack of knowledge, but I'm curious.

When I make a pot roast, I add in onion & celery, but also carrots & potatoes for my husband. I cut them big enough that I can avoid them.

So the question is: Do carbs from the carrots & potatoes "leak" into the juices from the roast? If they do, is it a negligible amount or something more that I should be counting?
