It seems counter-survival, but the low fat/high carb foods that are convenient and "cheap" was not a hard sell, either. Given such a broad range of foods to choose from, people will still eat the same thing day after day while complaining low carb is so "restrictive."
It was researching Nutri-System for my personal questions (People overpay for dehydrated hamburgers? dessert every day?) that made me realize a great many people just shove tasty food in their face to make their hunger shut up. There is some vague feelings they "need their vitamins" and then they buy a bottle to cover that.
There's no comprehension about what fat is for, how much protein they are getting, and what their blood sugar might be until it all starts grinding to a halt, and then they are told to take more pills to fix their conditions.
In such an atmosphere, how can they even start understanding their relationship with food, and how it works for health?
