Talking "Mock" Fettuccini Primavera - Mmm... I just found my Noodles & Sauce Substitute

I used to love having Lipton Noodles & Sauce as a side dish and now I've found my substitute.

It's called "Mock" Fettuccini Primavera from Food Networks Low Carb and Lovin' It. It is spaghetti squash with a creamy parmesan flavoured sauce. I used a full squash instead of the half as suggested because it seemed like a way too much sauce. I found it so good that I didn't even get around to topping it off with tomatoes and basil.

I made this and it is wonderful, must say I never did get to garnish it either with the tomatos and basil.

I tried this recipe because I had a spaghetti squash that I've been wanting to use. The recipe came out soooo good. I followed the advice of the orginal poster and used the whole squash instead of 1/2. It was the perfect amount for the sauce. I thought I had all everything I needed and found that I was out of parmesan so I used mozzerella instead. It was really creamy and very rich, I do want to use parmesan next time. I also left out the tomato & basil. My non-LC hubby thought it tasted like Lipton noodles & sauce and I never told him that's what the original poster said. I will make this again soon.

Default Delicious Pasta Primavera!

Since I'm not a very computer-literate person, let alone a forum-literate person, I can't find the original post of whoever suggested this the other day. ANyway, in case it's gone, I will give the website again bc I did the amazingly rich, creamy and cheesy spaghetti squash recipe tonight and it's delicious!! THere wasn't much protein in the origianl recipe, so I stir-fried some shrimps and extra veg and it's divine. Feel a little guilty with all the fat bc I then had a treaty dessert but it was low sugar and lower than the average in carbs (low sugar ice cream - still 14 g carbs- with no sugar choc syrop and berries--yuuuummmmeeeee).

First time doing spaghetti squash and came out a little mushy so I think I cooked it too long. Keep the creative recpies coming!

Thanks for posting the recipe, it's delish and the sauce is really good over broccoli & cauli. Happy to hear that you are starting Atkins over again, good for you! It's yummy recipes like this one that help keep me on track.

I don't know about mussels but it is excellent tossed with freshly cooked shrimp.

Cut it in half, scoop out the seeds. Lay cut side down in a shallow dish, add about an inch of water or a bit less, and cover with plastic wrap. Cook on high until soft.
