Default 90 Second keto bread

I saw this video on YouTube, and thought it sounded a bit odd, so I thought I'd try it out and see what the results were. I was pleasantly surprised. It's reminiscent of a whole grain wheaty kind of bread, not a soft and fluffy white. I'm actually surprised it worked with so few ingredients.

Ingredients:

2 Tbsp of ground almonds

1.5 tsp of ground flaxseed

1 teaspoon of melted butter

1/4 teaspoon of baking powder

pinch of salt

1 egg

Method:

Put it all into a square glass microwaveable dish and mix. Microwave on high for 90 seconds although microwaves differ so you may need a little more or less time.
After it cools, slice in half and toast if desired.

You'll hear that referred to as a "mug muffin" as well I think around these parts.

I fry mine in butter for crispy toast. And use it in meatloaf recipes.

1 tablespoon coconut flour
1-1/4 tablespoon butter, melted
1 egg
1 teaspoon sour cream
1/4 teaspoon baking powder

Ran out of sour cream and used yogurt and it came out just fine.

Oh I definitely want to try frying it. That sounds awesome. Does using coconut flour give it a strong coconut flavour? Not that I'd mind, just curious.

Hiya. IMO, not really, but I'm used to coconut flour flavour and kind of ignore it now. I love almond flour, but I've tried to eliminate it because it seemed to aggravate my arthritis. OTOH, I'm 'burned out' on flax flavour, so I try to use a combination. Some garlic powder and other distracting flavours work for me, too.

I'm another fan of using these as a grilled cheese base, and using a nice sharp extra-old cheddar. Another tip: I like to use parchment paper to line the dish. Saves a scrubbing later.

That sounds awesome! And I the parchment paper idea. I find that I end up scrubbing the container sometimes even after its been through the dishwasher. Great idea

Just get some good silicone bakeware. I use them in the microwave frequently and almost never have a sticking problem. They also make good mixing bowls, because everything slides out easily.

I've just purchased my first piece of silicone based cookware for a fat bomb recipe I'm going to try.
For this though, I'd probably want to use something with like one of those muffin top shaped ones in order to make sure that the size was right?

I start out by melting the butter, then roll it around the sides, then add the dry ingredients. No sticking. But then again, I make one at a time.
