Default Perfect Coconut Macaroons!

I know there are probably a million recipes for Macaroons already posted, but I wanted to share my version. It uses the bagged "Let's Do Organic" unsweetened coconut that you can get on Amazon.com for about $20 for 12 bags - one full bag per recipe, so it's easy

1 bag Let's Do Organic Unsweetened finely shredded coconut
1/3 C Zsweet (or other dry sweetener)
4 large egg whites
1 tsp almond extract (just barely full, not overflowing, or it's too much)
15 drops liquid stevia
1 TB coconut oil

Mix dry ingredients in bowl
In small bowl melt your coconut oil, then add your extract and stevia drops
In medium bowl, whisk eggwhites until firm

Then use your whisk to mix up oil/stevia/extract and use a rubber spatula to scrape into eggwhites and mix up a bit, then dump and scrape all into dry ingredients. Mix until coconut is damp.

Use a 1TB measuring spoon to make balls and bake at 350 on parchment paper lined baking sheet until golden on tops.

Mmmmmmm, they taste great!!!! If you make 25 of them, then it comes to about 75 calories/1 g net carb each

These also work GREAT as a base for strawberry shortcake, I discovered last night!

How do you do sweets like this with no milk?? I mean to drink?

They go great with coffee and cream - I've never been a straight milk drinker. I really like these for dessert with, like I said above, some crushed strawberries over the top with a bit of whipped cream But they're really good just plain - alone with nothing with them.

That's a good price on the coconut. I think I've bought it at Henry's for about 2.99 a package. BTW: If you "subscribe" to having it delivered every X months, you can get an addition 3+ dollars off AND free shipping. You can cancel at any time too.
