Default LC Spinach Lasagna--Yummo!

Made this last night for the 1st time and both hubby and I really loved it!! And I'm not even a big cooked spinach fan. But this was really yummy! In fact we fought over who would get to take the leftovers for lunch today! Even my VERY VERY picky DD thought it was good and good is about the best you can get out of her these days..ugh, gotta love teenagers.

Just thought I'd pass on that this one is a winner! Thanks Linda!!!

I wouldn't see why not!! Definitely give it a try! I was skeptical at first but really glad I tried it..It was easy and soooo good! And I was getting burnt out on the same ole things over and over. Happy to have another yummy & different way to use ground beef!

Went shopping yesterday, bought everything I needed to make this and will be trying it tonight. I will let you know what we think. I am going to double the recipe as I have 3 teenage boys, don't think that the original size will work.

I agree on the doubling of the recipe! I will definitely be doubling it next time I make it...which will be soon.

I am going to make it with italian sausage. I am going to get ricotta cheese to mix with the cream cheese. sounds yummy!

It is in the oven right now, can hardly wait.

I doubled the recipe and made couple tweeks to it also.

3 pounds of ground beef, I buy in bulk at Costco and freeze into 1.5 pound packs
Added Italian seasoning to my meat
Added fresh crimini mushrooms, 10 oz pack from Trader Joe's, net carbs 6
Omited the parm cheese as I do not care for the flavor

The spagetti sauce that I use is 5 carbs for 1/2 cup, 1 fiber, net 4 carbs, this is from Trader Joe's also, it is Trader Giotto's Three Cheese Pomodeoro Pasta Sauce, it is really good.

Curious how many carbs are in the spagetti sauce that was used in this orig recipe.

Will let you all know what I think.

I'm not sure how many carbs are in the spaghetti sauce Linda used in her original recipe..But I would presume she would be using a sauce with a lower carb count. It's pretty hard to find many that are less that 4 or 5 per serving so I'm thinking it's probably around there somewhere. But then that's totally a guess. Even if it's higher than that 1/2 cup of sauce isn't much at all..and then divide that by like 4 servings..you aren't talking too many carbs.

p.s. Found some of the really expensive jars of spaghetti sauce had some of the lowest carb counts but for ME I can't spend $6 or $8 for a jar of sauce (or something ridiculous like that) so I just suck up the 2 or 3 extra carbs per serving. Esp when spaghetti sauce is not normally something I have on a weekly or even monthly basis.

It turned out really good. Hubs loved it, 19 year old son said it was okay, 16 and 13 year old son's would not even touch it, they do not like anything green!
I liked it, might make it with only 1 package of spinach next time. I have some eggplant that I will be making another pan with in a few days, will make and freeze for couple weeks from now, need to use up the rest of the jar of sauce.

Thanks again for sharing this recipe and also the site that it came from.
