Default My *Pacific 'Parmesan' Cod Fillet* Recipe ~ YUM!

The is a recipe I created to liven up my Cod Fillets...and oh man, does it taste yummmy!

It is suitable for all phases of low-carb diets, including 'induction'

Minutes to Prepare: 5
Minutes to Cook: 10
Number of Servings: 4

Ingredients

4 cod fillets (4 oz each) - if frozen, be sure to thaw fully before cooking
4 tbsp Kraft REAL Mayo
1 tbsp Daisy Sour Cream
1/3 cup finely shredded Parmesan cheese (NOT the canned stuff)
1 tsp garlic powder or garlic salt, divided
black pepper (use as much or as little as you like)
non-stick cooking spray


Directions
Makes 4 (4oz) servings,

Combine mayonnaise, sour cream, and parmesan cheese in a small bowl, mix well.

Cover a cookie sheet with aluminum and spray with non-stick cooking spray of your choice.

Set oven to broil on high (if you have that option)

Place cod fillets onto cookie sheet, about 2 inches apart.

Spoon equal amounts of the cheese mixture onto each fillet and spread out mixture using the back of the spoon to distribute evenly over each fish fillet.

Sprinkle each fillet with half of the garlic powder or garlic salt and desired amount of Black Pepper.

Place cookie sheet into oven about 4-6" below the broiler.
Watch fish carefully. Depending on the weight of the fillets it will take between 10-12 minutes to cook fully. When you notice the cheese starting to brown, check fish every 30 seconds to see if it's done. Fish will flake easily with a fork when fully cooked.

Turn broiler off and leave fish in oven about 2-3 minutes more. (This is optional, but will ensure it's cooked all the way and give you a chance to finish the rest of your preparation)

Remove from oven and serve with side dishes of your choice.
