Tartare is a similar meaning; it suggests something rough and crude, like a Tartar horseman would eat. In Belgium the dish is called "filet américain", presumably because it infers the same sort of tough, rugged, eating wild kind of thing. Anyway, raw meat, by any other name.. n'all that.
