Does anyone know if these would freeze well? It's just me, so I'm thinking it'd be nice to make them and freeze some for later.
I don't think you can freeze them. I know when you freeze eggs the white part gets crystalized and rubbery. Also in general I think you can't really freeze dairy food. But if you try it please let us know for sure!
I wanted to make these tonight, but when I was in the chest freezer looking for something else entirely, I found a chunk of real ham - squee! I have to wait for that to thaw, then I'll cube and saute' it for these muffins. I'm thinking ham, cheddar and green onion. Yum!

Made these a couple of days ago, really lovely, BUT...I'm still trying to clean the muffin tin!!! Actually, I've decided to throw it away and try to find a better non stick one!
Silicone muffin cups work really well for these. The muffins pop out leaving no eggy residue behind. I'm not a fan of silicone baking pans and sheets for everything, but I bought a set just for this recipe.
Great recipe. Cooked last night and ate a couple this morning. More filling than I'd thought they'd be.
Have frozen the other 10. Frozen quiche before and it's fine so imagine these will work.
Be super handy for a quick brekkie when no time to cook. Might even be able to convince my wife to stop light and easy and go onto this diet with me! (Her big concern was breakfasts.)
