Default Peanut Butter Cheesecake with Chocolate Ganache

One serving, approximately 12g total carbs, with about 3g fiber. Use stevia or liquid splenda to bring the count down to about 10. This recipe could easily be made in two 4-ounce ramekins for 2 servings.

It's not much to look at, but it's one of the better desserts I've ever made. Very rich and very satisfying.



Cheesecake:
2 oz cream cheese
2 TBL peanut butter
1 egg
1 packet splenda or 6 drop liquid stevia, to taste

Mix well and pour into greased 6 ounce ramekin. cover w/ plastic wrap and cut small slit. Microwave 1 min at 50% power. Add 5-10 seconds at a time until just set in the center. Invert on serving plate. Pour ganache into little dent on top. Serve.

Ganache:
1 TBL unsalted butter or coconut oil
1-2 tsp cocoa powder
1 packet splenda or 3 drops liquid stevia, to taste
drop of vanilla

Melt butter in small glass cup and add cocoa powder, sweetener & vanilla and stir well.

I've been wanting something really rich & chocolatey to make for Valentines Day that would be LC of course, but super easy to make too. I love cooking, but baking is so hard! Thanks for posting this one Elle!

I tried one last night with gelatin. It came out ok. I think the lemon jello with the cream cheese tastes much better than the plain gelatin with PB.

Gelatin? How did you make that? Gelatin instead of cream cheese? That sounds....interesting. Were you trying to decrease the calories?

Elle - I was wondering the same thing....I've made a "no cook cheesecake" w/gelatin before, but WITH cream cheese as well, not "instead of". Hmmmmm.

I could be wrong but I think Lynn2bethin means she used plain jello, peanut butter and cream cheese rather than flavoured jello and cream cheese.

Also, I think this looks awesome. I'm adding it to my growing list of 'to make'

I made this tonight. I just did the peanut butter part and skipped the chocolate. I topped it with some sugar free whipped cream. Yummy! A nice sweet treat that's pretty darn easy to make. It was so filling, I couldn't even finish it! I ate most of it but had to leave the last couple of bites.

I've never been much of a fan of peanut butter desserts, but I definitely want to try this. I love how all you have to do is put it in the microwave! So easy.

The picture reminds me a lot of flan!

This is absolutely delicious. I went home sick early on Friday. Felt horrible. Had a snack of some pork rinds and sour cream, then thought of this. I had all the ingredients and whipped it up. Oh my. So rich and filling that I wasn't even looking for dinner later on. Elle this is one of the best things I've had. I used your original recipe, not the one with jello (where did that come from?). This is a total keeper. I'm going to double the ganache so I have some on hand, because it's a good recipe for that too.
