Vanilla extract is the liquid made with vanilla beans.
Vanilla sugar is just sugar that has been flavored with vanilla flavoring.

Vanilla extract does have carbs, but I'm not sure how much. I don't think it is too many.

HTH!

Default Vanilla Extracts

I think with all pure vanilla extracts... alcohol is used in the processing... there are some name brands out there that do advertise Pure Vanilla without sugar added to the end result...just have to check around but in your case Jessy may be a bit difficult...

Now if you are really ambitious you can try to make your own sans sugar....

"You can make your own extract by using one vanilla bean for every 120 ml. of
any clear liquor (vodka preferred). Split the bean open or just break it into
pieces and put it in the liquor. Close the bottle and leave it for about two
weeks or until the vanilla bean aroma begins to come through. Use a coffee
filter to strain the seeds and bits of bean out. The seed and surrounding
membrane is where the essence of the flavor is which is why the bean needs to
be cut. How this compares to purchased vanilla I can't say. Adding a drop or
two of vanilla to fruit will accentuate the fruity flavors."
