Imitation Rice Pudding
I was making a vanilla custard pie and mindlessly added double the amount of cream, so I had to double the recipe. I poured as much batter as I could into a pie pan and baked it. I took the rest and put in a pot and cooked it on the stove. I thought it would come out like a custard pudding but it was more like the texture of rice pudding. Very delicious mistake. (This is half the recipe I ended up making)
1/2 cup splenda
1 stick butter (room temperature)
3 tsp vanilla
5 eggs
2 tbls finely ground almonds
1/2 scoop vanilla protein powder
1 1/2 cups heavy cream
Cream the butter and splenda together. Put 3 tsp of vanilla in a measuring cup and add warm water until it reaches the 1/2 cup mark. Add it to butter and mix. Add the remaining ingredients and mix.
Put into a sauce pan on med heat and cook until thick, stirring constantly. Refrigerate until cooled.
If I would of known it would have turned out this way, I would have added cinnamon and nutmeg.
