Default Chocolate Buttercream Rolled Crepes

I got to messing around with the mock danish recipe last night, and came up with this. You make it in the microwave, it's quick and easy and it is SO good --

FOR THE CREPES
3 oz cream cheese
3 eggs
Teaspoon Splenda
Pinch cinnamon

FOR THE FILLING
2 oz cream cheese
2 tablespoons butter
1 tsp vanilla
2 tsp cocoa powder
2 tsp Splenda (to taste)

FILLING:
I make the filling first, so I can eat the crepes hot. You can make it ahead and keep it in the fridge, too. It's basically just modified buttercream frosting. Soften the cream cheese and butter in a small bowl. Cream together, then add the vanilla and cocoa powder. Add Splenda to taste. Stop tasting :->

CREPES:
In one bowl, soften the cream cheese (~20 seconds in the microwave does it for me.) Break the eggs into the bowl and add the Splenda and cinnamon. Whisk or use an eggbeater -- you want the cream cheese "bits" to be as small as you can get them, about the size of grains of rice. Pour a third of the mixture onto a greased dinner plate and put in the microwave for 1 minute. Depending on how much you poured and the strength of your microwave, you may need to put it back in for 30 seconds -- you want the "crepe" to be fully cooked. Loosen the edges all the way around with a fork, then carefully lift one edge with your fingers, using a fork or spatula to gently free the crepe from the plate. It takes a little practice, but it *is* doable. Put the crepe aside and repeat the process for the other 2/3 of the mixture. Obviously, you could double or triple the recipe and make lots -- I bet they would keep pretty well, too.

PUTTING THEM TOGETHER:
Divide the buttercream into 3 portions and spread each third onto one side of the crepe. Roll and eat warm. These are heavenly with a little (real) whipped cream on top, too. And nobody would EVER know they were low-carb! If you need an elegant dessert for your next dinner party, this is your baby

Makes: 3 crepes (3 servings)
Carbs per serving: 2 (according to FitDay)
Calories per serving: 281

this sounds really good i will have to try it. i have had an very intese chocolate craving lately thanks for the post.
