Default breakfast sausage

sometimes it's hard to find breakfast meats without added sugar. Here's a recipe for breakfast sausage that tastes pretty good!

1.5 pounds ground pork (or mixed pork and beef)
2 t. kosher salt
1 t. ground white pepper
1/2 t. dried sage
1/2 t. nutmeg
1/2 t. dried ground ginger
optional: 1/2-1 t. cayenne

Mix this, form it into patties or "links", and fry over medium low until done. Freeze the rest as raw patties stacked on doubled waxed paper then in a zippered freezer bag and you can pop one out for breakfast whenever you'd like either the evening before to defrost in fridge, or the morning of, and defrost in microwave. OR cook them all up and freeze them cooked.

sage, by the way, is super easy to grow and dry and makes for a lovely and deer-proof garden plant

Thanks for the recipe. I am so finicky about sausage because they are always too salty and tough on my tummy in the morning. This will be a great one to try.

Thank you so much for this Recipe! I have been searching for sausage in the stores but couldn't find any that didn't have corn syrup or bread crumbs. I LOVE breakfast sausage! I used to buy Farmer Johns & jimmy deans when I lived in California all the time but here in Canada I can't seem to find may breakfast sausages(I used to look all the time even before LCing).
I made up the mix right now, I ended up adding the cayenne. Haven't made breakfast yet this morning but I did put a little bit in the microwave to test the seasoning. It tastes Great!

I used this one years ago and still use today. Have sausage almost every am. I usually buy the big pack of ground pork form costco and freeze it is 1lb baggies. Last over a week for us a family of 3.

I just bought some ground pork so I intend to try this in the next few days. DH loves sausage and I just can't find one that I like as well as what some restaurants get ... looking forward to trying this one! And patties are so much easier to cook than links (meaning I intend to teach DH to fry his own while he fries his eggs. It should be a welcome change from ham.)!!

did you end up making? I LOVE this stuff.. eat EVERY morning for breakfast lol really every morning

I have to try that spice mix...sound good! And an added benefit is making your own this way costs a lot less...around here, it saves about 50% over the premade sausage.

Thanks for the recipe. I've been having problem with breakfast since I'm lactose intolerant and I end up skipping breakfast every other day. Your recipe not only sounds delicious it's healthy as well.

Hi Candice, nice to see you posting again

Just a tip if you (or anyone else!) are searching for a specific recipe .. each sub-forum in the Recipes section has a Table of Contents stuck at the top of the threads list. You can certainly scroll down the titles if you wish, but an easy way is to open your browser's "find on page" search tool and enter the desired word(s). Then you can just click the down button to reveal all titles that match

Might make your search a bit quicker

This is probably going to sound like a stupid question, but what does this taste like? Is it like the sausage patties that make up a McDonalds Sausage McMuffin? That is literally the only frame of reference I have for 'breakfast sausage' but if it's anything like McD's thing, I'd definitely be up for trying it out. (I know the other half would be totally stoked to eat them too!)
