(Serves 3-7; 12g total carbs per recipe)
2-Lbs. Ground Buffalo
1-Cup Horizon Organic Finely Grated Mexican Cheese Blend
½-Cup Herdez Salsa Cascera
1-Tbsp. Dash—Extra Spicy
Mix all ingredients in a large bowl. Preheat oven to 375 degrees. While oven is heating, form hamburger patties of desired thickness and place them on a large baking sheet. Bake for approximately 50 minutes, depending on desired level of doneness, flipping halfway through.

Afterthoughts
Feel free to substitue ground beef or ground turkey for the buffalo--it just happened to be what I had on hand. More cheese can be used, if desired. I think that these would be great with Pepper Jack, but couldn't find any shredded at the store tonight (and I was in a hurry.) Adjust salsa and spices to taste. As is, I personally think a little more could have been used...they were a little too "mild" for my personal taste. Next time, I'll try adding an additonal Tbsp. of the Extra Spicy Dash and I might throw in some chopped jalapenos.
That said, I managed to get seven good-sized (nice n' thick) patties out of this, each with less than 3 grams of total carbs. I had a couple by themselves, tonight. But I think I'll think I'll pair the rest with typical burger fixins--lettuce, tomato, pickle, etc. (I'm from TEXAS. It IS a word!
), veggies such as broccoli or green beans, or even with fried eggs.
Also, these would be great on the grill. Unfortuantely, I live an apartment and I was too lazy to drag out the ol' George Foreman. Regardless, I think they turned out nicely. Cook them as you see fit.
