I've tried it - it's very good!

Watch your prices on the pork rinds. So far, I've found SuperStore to have the best prices, plus they have hot & spicy - great as a coating on wings!

I found great Pork Rinds at Zellers actually - they are Frito Lay and are much tastier (relative term here) than most brands I find at the grocery store.

I tried it too. It's one of the WIERDEST things I've ever cooked. A dish only a true low-carber could eat. It sounds revolting, but tastes pretty good. I used a bag of Grams Cinnamon pork rinds that came free with a CarbSmart order. You'll want to grind up the rinds quite well, so you don't get any chewy-bits when it's cooked. I stirred a little cream in with Atkins s/f syrup, which I thought tasted better than the syrup alone.
