Default Garlic Cheese Fritters

I adapted this recipe from the "French Toast" in the breakfast section. Someone suggested posting it here so more people could see it, hope you enjoy them.

Garlic Cheese Fritters

2 Eggs
1/4 cup heavy (whipping) cream )
1 ounce shredded cheese (chedder or your favorite)
Garlic powder to taste
1/2 of a 3 oz. bag Pork rinds.

Mix eggs, creamand garlic. Crush pork rinds and mix with above mixture. Add cheese and mix,
Allow to soak until it becomes a very thick and goopy batter (3-5 minutes). Fry pancake style in butter

Question No-pork Fritters...

We don't eat pork. Do you have any suggestions about what substitute I can use in place of the pork rinds?

Do you know the carb count for it all? I thought pork rinds would be high on carbs
