I finally had a chance to try the lemon curd! My first attempt in the microwave, turned out lumpy, as Azure said. So I looked in Martha Stewart's book on pies and tarts (puchased pre-lc, but it does have a couple of recipes I adapted to LC) and found the lemon curd recipe. It's basically the same as yours, but you cook it in a saucepan. It was delicious. I used 3 eggs and 1/4 cup of lemon juice, which made enough curd to fill the almond cake, which I cut in half horizontally. But the curd was so good I could have just eaten it like pudding.
Thanks for the inspiration; I hadn't thought of trying to make this lc, and I have always loved it.
