Talking Every little success...

Well...today my college son called and wanted to go out to eat to a MEXICAN restaurant. Since I'm only 7 days into Induction, I have been avoiding Mexican because it is by far my VERY FAVORITE food, and I can hardly resist the chips, tortillas, etc.

Anyway, I went and ate NO CHIPS AT ALL and ordered a delicious taco salad without beans or tomatoes! I did not even feel deprived! He was a little curious as to why I didn't want the papitas that I LOVE and always eat (they're little chunks of spiced potatoes...very good!).

Anyway, this site sure does help me to stay focused. I'm feeling better all the time....

How great for you! Isn't it a good feeling to be in control when you go out to eat? I have a real simple recipe for a mexican casserole. If you want it let me know. It's very lowcarb. I love mexican too!

YES, I'd love to have that lowcarb mexican casserole recipe!! Is it allowed on Induction? If not, please post it anyway...I'll wait to fix it until I'm off of Induction. Thanks for the encouragement!

I love Mexican too..its by far my favorite..

But, after a week on induction, I was asked to go to lunch at our fav place...was not even a prob with those chips and salsa..and before..i would have killed for them..

oh my god! mexican food is pretty carby... well some of it. most of it. lol. i dont think ill eat mexican food for a while!

my boyfriend is mexican and when he came to visit me a few weeks ago he was forcin mexican food down my throut (he came here from mexico just to visit me so he made me eat "regularly") i think i gained a couple pounds from that GRRR!!!!! other than that, i got pretty good will power against food now hehe!!

Hi moon..

I know its carby, that must be why I love it so much!!

I am headed to Cancun in June..I have been to Cabo, have to venture down every year for Sammy Hagar's bday bash there..but I havent been to Cancun..so I am looking forward to it..

I love the authentic Mexican food..it is so different than what we get here.. and I am sure its very carby, so I will have to make adjustments for sure..

Default Mexican Recipe??

I'd love a low carb. Mexican casserole recipe, too! I've made the taco bef recipe found on this site and it's very good and makes a nice taco salad. But any inspiration would be greatly appreciated!

Default Mexican casserole

Hi guys. I couldn't find the mexican casserole on the recipe forum, so I don't how similar they are, but here goes.

I have eaten it during induction.

1 tub sour cream
1 package taco seasoning, or make your own
2lbs hamburg?( as much as you need)
1 jar salsa
1 cup shredded montarey or cheddar or mix cheese

brown hamburg, and drain. mix with 1/2 the seasoning and 3/4 jar of salsa

mix otherhalf of seasoning with sour cream

spread sour cream(you can use more if you need it, depending on how big a dish you use) in bottom of pan

put hamburg mixture on top

spread shredded cheese over all

bake ~ 350 for 1/2 hr, or until hot and cheese is melted and slightly browned

Thanks!! I'll try it either tonight or tomorrow night, and let you know.

Do you know what the carb count is for this? Looks like the seasoning and salsa would be the only thing with carbs in it. If you don't know, that's fine...I can figure it out.

sorry I don't know the carb count. The seasoning varies by maker. But none are too bad. The salsa is about 2g, per 2 tbs. But this recipe makes a 9x13x2 pan. It feeds my family of 4 with leftovers. I have eaten it during induction, lots of it, and stayed in ketosis.
