Default Oxidized Fats

I found an interesting book called Eat Fat Look Thin by Bruce Fife.

I haven't read it all yet, but he claims that oxidized fats cause the most health problems.

Oxidized fats would be polyunsaturated (vegetable) oils, homogenized milk products, and powdered milk and egg products.


What are your thoughts?

Also transfats, perhaps the most deadly of all.

Sounds about right to me. I believe he was a big proponent of coconut oil, correct?

I think the consensus among LCers as well as LC-supportive health care professionals is that stable fats are where it's at. Eat the natural fats that come along with real food like meat, eggs, dairy, and some plant fats like avocados, olives and nuts. When cooking, check the smoke point; don't burn the heck out of them. Minimize crappy industrial oils like canola, corn and soy.

Vegetable oils aka seed oils are worse than sugar and processed grains and carbs. Dr. Catherine Shanahan calls them Brain Killers. Below are from her 2008 book Deep Nutrition: Why Your Genes Need Traditional Food.

4-Hydroxynonenal or 4-hydroxy-2-nonenal or 4-HNE or HNE [ wikipedia ]

Special attention must also be paid to cooking oils used repeatedly in caterings and households, because in those processes very high amounts of OαβUAs are generated and they can be easily absorbed through the diet.

My highlight. Powdered milk is usually fat free. So Im surprized this is listed.
