Trayed Batter, using the little scoopie thingummy:



Baked (at 350F and only for 8 minutes, just long enough for the tops to be set). I think 375F is a bit high for protein and may be part of the cause of separation, as well as overcooking if at 375F for 10 minutes:



Bottoms nicely just golden, used a light coloured baking sheet to make sure they didn't get too brown...



Mmmmmmmmmmmmmmmmmmmmm, nicely tangy and can taste the peach...

Amount Measure Ingredient -- Preparation Method

DRY:
4 tablespoons protein powder, 100% whey natural Kaizen Vanilla -- WheyPI/WPC blend
1 tablespoon whey protein concentrate WPC80 -- brings up the proportion of WPC
3 tablespoons flax seed meal -- golden
1/2 package drink mix, Peach, Western Family brand -- sucralose sweetened for 1.5 litres-9g
1 teaspoon ExpertF not/Starch, NF -- 4 veg gums blend-gluten structuring replacement
1/2 teaspoon baking powder -- activates in the oven-preferred to soda
1/16 teaspoon salt -- 1/16th tsp
WET:
1 whole large egg, Born 3 -- beaten
1 1/2 ounces coconut oil -- melted
1 1/2 ounces butter -- melted

Stir together the dry ingredients and set aside. Melt the coconut oil and butter in the microwave on low power til just dissolved (not too hot, definitely not boiling).

Beat the eggs, then beat in, while pouring, the melted fats (this should emulsify the fats so they don't separate and run so easily).

Stir the egg mixture into the dry mixture and set in the fridge.

Heat the oven to 350F, and panspray quite well a large cookie sheet (I used a light-coloured sheet to reduce bottom browning).

When the oven is ready, scoop the mixture onto the sheet and bake for 8 minutes or until the tops are dry (used a little cookie scoop, ~2T size max, reduced the temperature to prevent protein overcooking and separating out the fats, oils).

Let cool on rack; will be a little fragile. Yielded 10.33 cookies.

caroline43, they're even more delicious than they look! Jude brought some to dinner last evening and got rave reviews!

Jude, thanks for posting the recipe ... I think I have all the ingreds on hand - not sure what flavour crystal lite I have, but will be getting some more flavours when I shop this afternoon! Maybe I can wean John off the Ross bars and onto protein cookies!!!

Off the Ross Bars would be a Very Good Thing! Lemonade or Lemon Lime or anything citrusy (Orangeade?) would be just fab in this.

Oh, BTW, the Protein Powder and Protein Concentrate can be replaced with 5 Tbsp total of a good blended Whey Protein Powder, i.e., must be Whey Protein Concentrate and Whey Protein Isolate (or other blend) in the Ingredients List on the back, not straight 100% Whey Protein Isolate...

I'll let Jude give you the details on Born 3 eggs but basically, I think they're enhanced to be higher in Omega 3 & 6 fatty acids. I get my eggs free run and very fresh, so I just use them and get my Omegas from other sources.

It's a brand name. No big deal; but I do like my eggs all vegetarian feed, no ground up cow parts in the chicken feed. This brand says so explicitly, along with no antibiotics, etc.

Most capitalized ingredients in my MasterCook are brand names, pretty standard.

Well, I just had to recheck your recipe to see why mine didn't taste anything like yours!! I finally noticed that your Western Family drink mix makes 1.5 litres - my Crystal Lite makes 500 mls, duhhh.... OK -- next batch I'll use 1 1/2 individual packets of the Crystal Lite. This batch is OK, but it's kinda blah - not something I want to try to impress anyone with (and I don't think it will wean himself off Ross Bars)!!

Speaking of Ross Bars, does anyone know why they've been recalled? The gal in Thrifty's claimed not to know, and she also didn't know when they'd be bringing them back in, if at all!

Glenda, pet, 500mL is 1/3 of 1.5L, so you'd need to use 3 of those packets. Related to that, I cruised through Safeway yesterday and picked up fullsize Crystal Light boxes (makes 1.5L) at 3/$5.00 so 1.67 each, including the Lemonade (not Pink, not Lemon Lime, nice and yellow ) flavour! If you get the chance, you might want to load up...if there's any left. I'm eyeballing the Tangerine-Grapefruit flavour, too...

News to me on the Ross bars, is it Thrifty's only? or everywhere?

Except for what's out of stock, they're still on the shelf at the Market on Millstream (had to go near there to stock up on Coal Miner's Daughter Organic Blend Decaf, eh?)...

Also, denada at either the RossDirect.com or the RossChocolates.ca websites about a recall. Maybe they just weren't selling well enough at Thrifty's so they sent 'em back? There's the customer service desk, or even the Thrifty's website if you're annoyed enough, Glenda!


...and speaking of which (ouch! you will not believe this!) Gabriola Island Chocolate has a Definitely Without Sugar Chocolate bar, in White Chocolate! Wow. Yep, it's maltitol, BUT...it's top grade if they do their usual, it's local, and how cool is that? I swung by the Customer Service desk and asked to them to enquire (in writing, natch) if they make an NSA Dark Chocolate Bar, too...

Sigh.
