Re: Iodine. As I understand it, adding iodine to table salt was one of the earliest nutritional interventions on a big scale, probably when I was a tot. That's a long time ago. The marketing of "gourmet salt" might have reduced the use of ordinary iodized table salt to some detrimental effect.
FYI: This week I bought iodized Sea Salt at my ordinary grocery store. So if you choose to use this salt (I'm not sure what's so special about it except being chunkier) you can find an iodized version.
