okk - so I didn't double check the carb count but this recipe is pretty good & makes you feel normal....

Low Carb Kahlua

This makes a great gift for your low carb friends. In coffee, over ice with cream, or in a Mudslide, with some Low Carb Irish Cream this is delicious!

You will need an empty bottle or large glass jar to store the Kahlua in.

1 ltr. bottle 80 proof vodka (trace amount of carbs)

1 ltr. spring or purified water

2 tbps. vanilla extract, or one large vanilla bean split and scraped

1 tbs. good quality instant coffee

1/2 to 3/4 cup Splenda or sugar substitute. Adjust according to your taste.

Combine 1st 4 ingredients in a covered saucepan. Warm until coffee is dissolved. Remove from heat and leave covered (or alcohol will boil away). While still warm add sweetner. Pour into container and put container in a brown paper bag and store in a dark place for at least a week to let flavors blend. Okay, I admit it, I have had some right after it cools, but it is best after a couple of weeks.

Approx. 8 Carbs in entire recipe.

That sounds dangerously good! Does it really taste like Kahlua?

I kinda get used to being in the mind set that nothing really tastes as good as before but I think this is yummy. It seems stronger though...Add to heavy whipping cream or drop some cool whip in and it's great!

Okay I will! Right now I'm trying to avoid Splenda and alcohol, so it might not be for awhile. But I printed the recipe out and will try it, maybe in a month or so. Or if I have a wild craving for Kahlua, maybe sooner! Hehe!
