Default Egg Loaf

Egg Loaf is a high fat, high protein loaf that resembles French toast. I'd seen mention of it around the interweb, and decided to give it a try. This is my very simple version.


Egg Loaf

50g melted butter
180g cream cheese
6 large eggs
½ tsp cinnamon
¼ tsp nutmeg

Preheat your oven to 350°F/Gas 4 and grease a brownie pan or a small loaf pan.
Combine all the ingredients in a blender or food processor until smooth in consistency.
Pour the batter into the pan and sprinkle additional nutmeg on top, if desired.
Bake for 25-30 minutes (time will vary depending on your oven). It will puff up when baked but fall once out of the oven and cooled for a couple minutes.
Allow to cool for 5-10 minutes before slicing and serving.
Best stored in an airtight container in the fridge up to 5 days.

It's delicious. It really does taste like French toast.

I usually bake it in silicone muffin cups, often adding some raspberries or blackberries:

This is is a batch before it falls and compresses:

Ingredients:

• 8 eggs
• 8 ounces of cream cheese
• 4 ounces of butter (a stick)
• Various flavorings -- I did 1 tsp vanilla, 1 tsp cinnamon, 20 drops EZ-sweets, ...

Directions:

• I cut the butter and cream cheese up into 1 ounce squares microwaved them for 40 seconds
• Added them to a blender cup with the eggs and flavorings
• Pulverized until I had a creamy mixture
• Evenly divided up the mixture over all of the molds
• I baked for 20 minutes at 350° F
