so why did i think parsnips were super lc? i've never had a parsnip before so when i went shopping for my veggies i thought i would try something outside my usual veggies and thinking they were super lc i bought three of them not having a clue what they taste like or what i would use them for.

well, i was pleasantly surprised once i cleaned them and tasted a bite. oh my! they taste wonderful. even better than a carrot. however, once i tasted it i knew it couldn't be lc so i looked it up on fitday.com and although they aren't terribly high in carbs at all they are higher in carbs than a carrot and their natural sugar content is higher, hence the better taste. per ounce raw they are 3.7 net carbs compared to a carrot which is 1.91 net carb per ounce.

well it still isn't horribly bad so i will use them. never knew they resembled a carrot in taste or taste better.

anyway, i love them and used in moderation i think i will be okay.

i can't wait to use them in a salad or stir-fry or something and they taste great just raw too.

I like them too! I've roasted them and they were yummy that way.

Another way to is cook them up, either boil or bake, them mash them up.

oooh. i love the idea of baking and mashing them judy. dang. i might like this better mashed than my baked turnips.

i'm going to try them baked by themselves just so i can see and since i do have a lot of turnips, i will try a version with both mixed together baked/mashed.

sounds like a plan.

Another thing that I've done is roast an entire pan of asst root veggies. turnip, parsnip, carrot, onion and whatever else you can think of.
High heat at 425 -spray with oil and sprinkle with sea salt.

okay. so for Sunday dinner just ended up pouring all of them in my ital curry pot and letting them simmer and they were just so bomb.
