Default Brown Bag Lunches

I am probably going back to work soon out of necessity. What is a good lowcarb vegan option to brown bag. I am going to have to carry my lunch, because I don't want to regain what I have lost. Macadamia nuts are good, but I am having a hard time thinking of travel friendly foods.

- Avocado, just bring a knife and spoon, cut it open
- can you boil water at work? I do a mug of instant chicken broth and add coconut oil...makes it richer and filling, you could do it with veggie broth instead
- I also like Brazil nuts, a good keto ratio
- cucumber and celery sticks, radishes, and a tub of hummus (if you eat legumes,could be babaganoush or nut butter if not.)
- can you bring leftovers in a thermos?
- the occasional protein bar? There are some made of hemp or pea protein instead of whey and the high fibre count can lower the effective number of carbs

Vegan keto must be really hard?

Macadamia nuts are easy to overeat. I’d suggest taking the extra time on your days off to prep meals, big casseroles, etc, for a thermos or let come to room temp in a lunchbox or do that "salad in jar" trick. With an ice pack, I would trust any of the followung:

Tofu or tempeh
Seaweed snacks
Carrots or bell peppers with guacamole pack
Hummus or baba gnoiush with green beans, cucumber, grape tomatoes, etc....
Pumpkin seeds, sunflower seeds, nuts.....
Celery with almond butter
Olives
Avocado with salt and a spoon!
Edamame or dry roasted edamame
Miso soup packet of your office has a hot water thing for tea
Very dark chocolate
A thermos or coconut milk- you could add.protein powder or something like stevia and raspberry extract
Berries
Dried coconut flakes
Flaxmeal to make a hot cereal with water and toppings like berries or nuts
Granola made from nuts, seeds and coconut
Almond or coconut yogurt (kite hill makes a great unsweetened one)
Shiratki with sesame peanut sauce and carrots/ cucumber
Leftover roasted veggies like balsamic brussels, peppers, etc....
Spaghetti squash with vegan pesto and nutritional yeast
Broccoli with sesame peanut dip

this was one of my first questions when i started atkins induction. i finally settled on nuts (macadamia, walnuts, etc.) and boiled eggs. then it hit me - working is a great fasting period. no need to eat at all. for me, volunteering at a pharmacy on fridays, i eat before work if i eat at all. i look at the break room full of donuts and pies and cookies and just shake my head.
