Question What to put meals on... help!

Hi all. My family likes several meals that I make that have sauces with them. Ex: Beef Stroganoff, swedish meatballs, etc.
What can I put them on? I have been serving them in bowls kinda like stews but I would love a different thing.
(Also it seems like our meals are only meat and veggies in a bowl, boring at times)
I've tried veggies like broccoli and such but they just don't hold sause if you know what I mean.
I haven't had any low carb pastas that taste good and my kids want no part of that.
My only success so far is grated cauliflour but that can be too sweet. Ideas?

I enjoy steamed green beans or spaghetti squash (excellent) or zucchini ribbons (I make with the vegetable peeler) that I've sauteed with olive oil and garlic, or even shredded lightly steamed cabbage.
