Oh my gosh, that is the most delicious looking gumbo!
I know it's a little late but I'd love to join your thread
I don't know how safe it is to lose 20 lbs in less than a month and a half, but I'll certainly try without pushing myself too far!
Thanks for the recipe! Will be trying it this week for sure!
I am currently on induction, but am really curious on one thing (I'm relatively new to LC and am a busy bee, so I don't get a lot of time to research these sorts of things)
anyway, I was wondering how to monitor calorie intake.
I've noticed that my LC diet actually has me consuming wayyyyy more calories than I used to maintain on my regular diet.
I've only been watching my carb count, but I know watching calorie count is important too - how do I go about this?

Hi Jfan,
Welcome to the group. Whatever we lose from now to May 31 is great!
It really does help to understand the science behind Low carbing. I highly recommend the Atkins book or Gary Taubes book 'Why we get fat".

Counting carbs is far more important than calories, especially in the beginning when you are new to this way of eating. I can assure you that I lost 44 lbs. in about 5 to 7 months and never once counted a calorie.

If you have your wts from 2 / 9 / 16 Apr -- you could enter those by copying the table and adding your info to the bottom... Goal being 2 Apr wt minus 20# or any other goal you'd like starting whenever... Good Luck!

In a largish soup pot, heat oil on high heat, add onions, green peppers and celery and saute 2 to 3 minutes. Stir in bay leaf, seasonings, garlic and saute for another 5 minutes, stirring ingredients frequently.
Add remaining ingredients except for shrimp, bring to a boil and simmer for about 25 minutes or until vegetables are well cooked. Just before serving stir through shrimp until just cooked (a minute or two).

I wanted to use Okra to make it more authentic but I didn't have any in the house. If you decide to add some, I'd cut back an equal amount on the celery to keep the carb count the same. I served it over white rice for the kids. A very easy to adapt recipe for the non low carbers.

Michelle, thanks for the advice!
I have the atkins book, which does emphasize high fat (therefore high calorie) consumption. I was just worried I was overeating since calories are still a hot topic on the forum

jfan, what I've heard is that if you are losing weight without counting calories, great. It seems to come into play more when people get stuck, I think.

Chef: One of the rather inexpensive fish available to us at home and here in FL is 'Swai'. It is similar to grouper, but milder imho. Any special recipes you'd like to share?

I understand a number of restaurants down here were exposed a few years back for selling swai as grouper...

Let's make the Swai together. OK everyone on board.

Go to the grocery store and get.

800 grams of Swai or Grouper or Catfish or some kind of white fleshed fish
1/2 tsp of rosemary (ideally ground)
1/2 tsp of dried thyme
some butter
salt and pepper
lemon
1/2 cup or so of grated Parmesan cheese

Everyone try a new vegetable.
I suggest something bright green, fiddleheads, spinach, asparagus, broccolini, bok choy.

Let's cook Friday and I'll take photos and then we can share our successes.

Who's in for it?

Next week I'll show you how to make delicious parmsan braised fennel.

I'm in! Now I'm going to cheat because I have some in the freezer. I know... fresh is better but I live 25 minutes from a town that has fresh fish AND because my DH didn't like it when I fixed it! I bet he will like THIS!

Just defrost your fish in the fridge rather than the counter. I find that it's slightly less watery this way. Give a full 24 hours for the fish to defrost.

OK who else is in?
