Mexican cheeses made for frying - queso blanco and queso para freir (I taste no difference between them). They're sold in a block, so I just cut off a few slices, weigh them (so I know how many servings to track!), and fry in butter or oil in a pan on the stove. It's quite flavorless by itself, so I like to describe it as similar to tofu in that it doesn't taste like anything until you cook it in something, you know? I fry in oil and dip in marinara (sometimes add Italian seasoning to the oil while it's frying), or I fry in butter with cinnamon and then dip in sf pancake syrup as a mock french toast.

6 oz of turkey salad
2 oz of cheddar cheese
1 large-ish serving of Reuben Casserole.

It was the first time I've tried the casserole recipe and OMG was it good! I will definitely be making it again. I got the recipe from Dana Carpender's 500 Low Carb Recipes.
