when you work your muscles, the muscles actually tear - they rebuild while you sleep and on your rest days. When you work them, they retain water - especially at first. This will add weight to the scale. Your body does eventually figure itself out. when you start at the gym, especially if you're lifting weights, use the scale as a reference, not as your progress meter. Use your clothing and a tape measure for your progress meter.
As for the sodium - stay away from things that have a high sodium content- sodas, prepackaged foods, etc. diuretics are water pills, diet pills, etc - they make you pee a lot more than you probably should and you'll be losing your potassium and other vital nutrients that your body needs to remain healthy. Potassium, among other things, keeps your muscles from cramping.
Drink a lot of water and stay away from the diet soda!
