Hello Mainecyn!! Well for me I keep it simple since I'm not a big fan of veggies,but I take avocado and smush it in a bowl with a small amount of lemon juice,some garlic,onion powder,and pepper..I add a dollop of sour cream and combine this to make a thick smooth dressing I mix into a cup of finely shredded lettuce..I then lay my protein on top and eat together..YUMMMO!!! You can also add tomato,black olives also if you like!!
I make a mean guacamole salad, too. Mine is mushed avocado, diced onion, garlic, cilantro, jalapeno peppers, tomato, salt and lime juice. Then thin it down with sour cream to a desired consistency. I actually like it without sour cream, nice and chunky. But dh and the kids like it a bit softer.

Wow, I had never heard of guacamole salad. Think I lead a shelter life. I'm sure my husband has, grew up eating them-picking them off the trees in Ca. I don't like just plain avocado, sliced like he does, but i have eaten it smashed up with a little mayo in it for the fat. I've got to try this. I bet it is amazing with steak.
Vestrada, the best way to cook cauliflower (IMO) is to roast at high heat 425-450 degrees until lightly browned along the edges. Really brings out a lovely nutty flavor. I used to hate it before I started cooking it this way!
Cut the head into florets or chunks or wedge into 8 pcs., then toss with olive oil and spices-could be garlic powder, chili powder, S & P, etc., then place on a foil-lined baking sheet and roast for 15 mins or so, depending on how brown looks good to you. Yummy!
You're welcome! I find so many great tips on these forums, because while I'm really sticking to this WOE I still love to cook and, more importantly, eat great food. Tried the pom-cherry smoothie this am with oat bran and a few frozen cherries thrown in instead of ice- delish.
Dinner tonight will be out with the girls after we see "The Help", so I'll have to be good. Last night had a great caprese salad with fresh mozzarella, tomatoes and prosciutto with tons of basil from our garden- I just love summer.
Since we're speaking of some tips and tricks..I have started buying these 10lb boxes of pre-made 6oz beef patties..The box is 2.39$ a lb and the meat is delicious!! Really flavorful 85/15 mix..What I like so much is the box fits nicely in my freezer and I take out a stack of 6 patties at a time and let them thaw in my fridge..Since they are 6oz each it helps me to measure my protein each day..I either use them whole and top with cheese and serve with a salad,or I break them up to make chili or a curry with..They are cheaper than the bulk packages,and so much easier to store and use..
