I have a real problem with chicken; anything quick, and it tastes like dirt. I like the rotisserie chickens and my friend in the trade says they are injection/marinated with the flavoring, so I was trying to remember to do that the night before.
No, you're right, Nancy, Pyrex won't take that hot an oven. But I bake most all my meats and chicken in a large, metal roasting pan. I only bake casseroles and desserts in glass. Foil liners are always a good idea, for easy clean-up.
I made this last night with chicken thighs and it was amazing! I think you could use any sort of spice blend in place of the Montreal Steak. Next I'm going to use Lemon Pepper Mrs Dash and try that. Yumm!!!

Glad you liked it, 0Angel0. Yes, this method words wiath any spice blend you like, it just will reflect that particular spice's overall flavor to teh chicken. I'm particularly fond of the Montreal Steak blend though.

I actually had a pyrex dish explode as I was removing it from the oven. I don't know how I escaped without being seriously hurt - we found glass in the garbage disposal and on top of the fridge. I had two smaller peices hit me on the chest. They stuck and seared me. I did a quick flick and got one to come off - the other one I just accidentally managed to shove under my bra and burn me there too. That was the one that did the most damage - by the time I got it off of me, I was really blistered there.
