Really? Huh. Learn something new everyday. Thanks!

Whether you can taste them or not in a flax muffin depends on the amount. I use them in almond meal ricotta pancakes, but I like the taste and add enough so I know they are there.

Yes you can taste it in the muffin. It adds flavour and texture too.

This is a baked muffin that I make . . . not the microwaveable one.

3 eggs
1/3 cup oil
1 cup 100%pure pumpkin
1/2 cup chopped walnuts
1/2 cup water

Mix dry ingredients together, mix wet ingredients, then combine them and let sit 5 minutes, stir again and fill your pam sprayed muffin tins 3/4 full.
I baked on 350 for 40 mins.

My recipe is:

Flaxmeal Muffins, Phase 1
1 egg + 1/4 c. egg substitute
3 Tb. DaVinci sugar free syrup (any flavor, you won't taste it in the end)
2 Tb. vanilla
1/2 c. Bob's Red Mill flax
1/4 tsp. baking powder
1/4 tsp. baking soda
2 Tb. cinnamon
pinch of salt
1/2 c. Splenda

Bake at 350 for 40 minutes. Each muffin has almost 3 Tb. of flax in it, and about 8-1/2 grams of fat.

That's the original recipe.

I usually don't add the da vinci syrup as we have no such thing here in the UK
I reduce the splenda to 1/4 cup and add 1/4 cup of coconut.

Actually, I've done all sorts with this recipe. Like baking it in a small loaf pan instead of in muffin tins; adding different fruits like apricots, mango, banana, plums, apple . . . you name it.

Actually we do, though they are rather expensive. Check out the Low Carb Megastore, you'll find them under 'Syrups-Spreads'.

Chick pea flour, great for making one of the foods I miss so dearly...Roti. Yum yum, but that's what got me fat in the first place; rotis, doubles, and phoulari (trinidadian foods). So I'd have to say a Big "No" on the chick pea flour even though to me it really taste great. Perhaps in stage 3 or 4 of Atkins if that's your plan. You'll have to try it for yourself I suppose.

Thanks for the info!!

Being that this is the SBD section of the site....we do eat chick peas as part of the plan and could use the flour in recipes....moderately.

The problem I have with ordering stuff from places like that is I'd have to pay £5+ for delivery. Unless I'm making a big order (and I don't need most of the stuff on the site), the price of delivery is just disportionately high. The arranging delivery is another nightmare. Being at home to receive a parcel isn't an option.
