One thing I think we need to remember about fiber is that the health benefits go way beyond helping us stay full and keeping us regular. Some types of fiber reduce the risk of heart disease... which is pretty important.

IMO, celery is merely transport for other more delicious food. I really like it with peanut butter on it, or cream cheese... I'm sure I can think of more things to put on it.

Today I wondered about alternating strips of PB and jelly on it. I've been having it with PB every day trying to get my fat percentage up a bit.
