When I was cooking dinner last night, I noticed I had a bunch of mushrooms that were getting a little old. So I made an additional veggie side dish (I had steamed asparagus as well).

I sauteed about 14 mushrooms (sliced thin) with about a cup of fresh baby spinach in 2 tsp. of olive oil. I put a little garlic powder on it, and a little pepper. I drained some of the excess water out after a few minutes. After the spinach and mushrooms were sauteed, I added 3 tbsp of light feta and let it all melt together. Once I blended it all together, it was fantastic. The feta thickened up the natural juices that come out of the spinach and mushrooms, so they didn't bleed all over my plate. The spinach wasn't really necessary for the taste, but it just added a touch of green to the otherwise boring looking mushrooms. I'm sure you could use something else if you don't like spinach.

That sounds yummy!!!

One of my favorite veggie dishes is sauteed spinach and mushrooms. I heat up olive oil with fresh garlic cloves for a few minutes...it gets the oil tasting all garlicy Then I sautee the mushrroms first for about 10 minutes, lastly adding in the spinach as it only takes a few minutes for it to wilt down.

I'm going to try the feta next time!! Thanks!

Thanks scagz!
Many of us are from the US and some are from other countries like the UK and Australia.
Sounds like a good bread.
