Geocaching! At first glance it doesn't seem like such a great choice because it involves stopping and searching every so often. I've tried hiking in for the amount of time I want sustained effort, then caching back out. That works pretty well. It adds to my total step count and time, and I get the thrill of the find (not always).
If you want something you can do without buying a GPS, what about figuring out the distance to someplace cool, then tracking your mileage and walking to that place? How many miles is it to Yellowstone? Keep track of your daily mileage and see how long it takes you to 'walk to Yellowstone'. Keep a fun and funky chart somewhere you will see it.
