Default OMG Pancakes

No, really! I HATE eggs and these are not eggy AT ALL! Been doing this low carb lifestyle now for over a year and have just discovered Flax Meal and Almond Flour, which I've incorporated into a Pancake recipe that even my very finicky boyfriend enjoyed.

I'm not sure of EXACT measurements as I basically conjured this up after reading a bunch of different pancake recipes.... ENJOY!
Atkins Bake Mix – about a cup
Almond Flour – about ½ cup
Flax Meal – about ¼ cup
Baking Powder – about teaspoon
1 egg
Whipping cream – about ¼ cup
Water – enough to make runny, maybe ½ cup, maybe more
Vegetable oil – about a tablespoon
Dash salt
Dash vanilla
Dash splenda
Dash cinnamon

Mix all ingredients thoroughly (adding water if need be) and cook in hot butter and woooowwwieee! Enough for 2 maybe 3 servings... ENJOY!!!!

I'm sure any kind of low carb baking mix will do ...

These really turned out fabulous. I can't stop thinking about them! It's insane sounding, I know. But for a year and half now, I've been craving, craving, craving pancakes. Tried the Atkins pancake mix and too, too, too eggy tasting. Tried a recipe that called for flax and cottage cheese and too mushy -- I'm big on consistency. And these had the conistency and the taste... my first couple only didn't have the splenda and cinnamin and I found them quite bland... so I added the splend and cin and they were really fantastic.

Default OMG Induction Pancakes!!

Okay. I'm back on strict induction so I've altered my OMG Pancake recipe a bit and have exact measurements (sort of) this time:
1/4 cup atkins bake mix (3)
1/4 cup flax meal (0 because of fiber)
dash salt (0)
1/2 tsp baking powder
1 egg (1)
tbsp sf vanilla syrup (0)
tbsp sf cinnamin syrup (0)
tbsp heavy cream (0)
tbsp oil (0)

Mix all ingredients together and add more liquid or more mix if consistency isn't up to parr. Heat on MEDIUM with butter in pan. Tablespoon onto pan and cook slowly and patiently so they don't fall apart. These are perfect!!

PERFECT! Nice and sweet, even without adding sf maple syrup when eating.

Recipe makes 10 pancakes. At about 5 carbs for the entire recipe!!!!

I'm eating them as I'm typing and I think next time I won't use so much of the sf syrup in the recipe as they ARE a bit sweet. But I'm a BIG STICKLER with texture of foods and these have the taste AND texture of pancakes -- ON INDUCTION!!!?!??!?!!!

Sounds great! What type of induction safe syrup do you use? I've tried the Atkins and it is pretty much water with maple flavoring ha. Do you know of any that are thicker but not full of suger alcohols?

You can buy maple extract and add that to melted butter.

I'm afraid to try them during induction, but it looks great so I will definitely try them later. I miss pancakes.

is it safe to eat the whole recipe for induction, or are they large pancakesand only a few should be eaten?

Sorry if this is a stupid question but I am new to all of this. What is:

sf vanilla syrup
sf cinnamin syrup

Is it the extract? What does the SF stand for??

sf = sugar free and they syrups are by davinci or torani
