Default Grain free/Dairy Free rolls

This is my new challenge. Also soy is out too.

I'm thinking of trying something like the old Atkins revolution rolls, which were egg whites and cottage cheese.

I think maybe beaten egg whites with perhaps flax meal and/or nut meal might work. I'm not positive my gut can handle the nut meal though.

Any other ideas? I'm going to try something this weekend.

Hey, maybe some sort of vegetable matter... pumpkin or squash.

I am allergic to allot of foods like you. maybe you could use organic sunflower seeds or pumkin seeds. I get mine thru www.natural-lifestyle.com
I have been having problems with soy also so I probable have to give that up to.

Oh yeah, I've heard of that magazine on the Celiac web forum, I'll have to look it up! The seed meal is a good idea! I'll have to try it. Hopefully I can come up with a bun type of thing. I wish they'd make flour out of squash.

Yeah, that would make sense. I bet it is something I could find in a good Asian market. But I always have trouble finding things!

Hi Nancy,


I've been reading these boards a long time but usually just post on LCF. I've also read the forums on the celiac sites. I am not celiac but am sensitive to gluten and have many other food/environmental allergies.

I signed up so I could post this information for you.

I found a site I haven't really looked into well yet called pumpkinnook.com. They sell pumpkin flour...amazing.

I can't imagine pumpkin flour would work in baking but I could be very wrong. I will be checking them out myself as I'm not having any luck with nut, coconut, flax meals or any other LC subs flour my self. I keep trying but I'm not tollerating these subs very well.

Anyway hope this is a help for you! Good luck in your searching.

That is so cool! Thanks for telling me about it.

Usually "alternative" flours need a lot of help to work and they all seem to work a little differently. High carb ones are easier to use than the low carb alternatives.

I'm sorry Nancy, I just checked the site closer and they tell you how to make pumpkin flour, they don't sell it. I could have sworn that I read they sold it before. Also they say you can only use up to 1/4 of the amount per recipe. I'd guess it is to "heavy" for using more. Still, next fall when pumpkins are plentiful I might give the flour a shot. Can't hurt to try it out.

I could just use canned pumpkin and cut down on the amount of liquid I add.

I've got coconut flour, not crazy about it for most things. It is really hard to work with.

Here is what i usually do for rolls, they are okay.

Diet Revolution Rolls

Makes 6 rolls

pam spray
3 eggs separated
1/4 teaspoon cream of tarter
3 tablespoons cottage cheese
i package sugar twin

preheat oven to 300
separate eggs carefully, do not get any yolk in the whites
spray cookie sheet with pam[i skip this and use parchment paper]
beat egg whites with cream of tarter until whites are stiff but not dry
fold in yolks, cheese,and sugar twin, being careful not to break down egg whites,mix less then one minute
place carefully on the cookie sheet, gently putting one tablespoon full on top of another untill each roll is about two inches high. repeat untill you have six piles
bake at 300 for one hour, till rolls look like deli rolls

total grams 3.1
.5 grams per serving
This recipe is from the 1972 version of Dr Atkins Diet Revolution, it is not in my newer versions. I have made them leaving out the cottage cheese, and they still worked but were flatter.

Hi Nancy,
I have tried the rice flour (brown and white ones) and it is very hard to work with and I don't like the taste. this flour has to be mixed with other flours to taste like something decent.

Nancy, have you checked out http://www.scdrecipe.com/?
Both of them have a lot of wheat-free/gluten-free recipes. They do use limited dairy--eggs, dry curd cottage cheese, homemade yogurt or kefir--but only those things and they don't include them in everything. Hope this helps.

Unfortunately all the SCD bread recipes I've run into had milk products in them, including these. :\
