I appreciate the "cheesy" taste too, especially when I'm off dairy products for one reason or another. Those herb/seasoning ideas sound yummy!

9 grams of protein in one Tbsp seems high (???). I use Bob's Red Mill brand, which provides 8g protein in 1/4 cup serving. Because the yeast is grown on molasses, it does have some residual carbohydrate .. 5g total, minus 2g fiber per 1/4 cup. That's <1g net per Tbsp, so not bad.
For the record, most animal foods are excellent sources of vitamin B12 and other B vitamins .. especially egg yolks, liver, red meat and cheese/yogurt. Plant foods do not contain any B12, so nutritional yeast is often recommended as a supplement for vegans & vegetarians .
