My new favorite secret ingredient for ground meat patties and meatloaves is fresh-ground chia seed. Not only is it highly nutritious, it's gelatinous and absorbs a lot of liquid, including the fat in ground meat. Both qualities help hold the meat together and make it juicier, not to mention tastier. About 1/3 cup chia seed per lb. of ground meat is enough for me.
Grind the seeds in your coffee grinder.
