My boyfriend made this for me last night and it tastes amazing!
Garlic and Parmesan Zucchini
Ingredients:
3 medium zucchini
4 Tbsp. Parmesan cheese
2 tsp. garlic salt
2 Tbsp. butter
Preheat oven to 350 F.
Cut zucchini into thin slices and layer on a cookie sheet. Sprinkle garlic salt and Parmesan cheese over the zucchini. Slice butter and put these butter pats spaced out on top of the zucchini. Bake until slightly crispy and zucchini looks clear. BTW, amounts of Parmesan cheese and garlic salt are really to your own taste.
Mmmmm! *I* absolutely LOVED this! My dgtr said it was "okay...could have been crispier" (lol) and DH...well, he just doesn't LIKE zucchini unless it's batter-dipped and deep fried! Oh well.....all the more for ME!
The only thing I did differently was to use olive oil in lieu of the butter, but it went GREAT w/ my leftover LC lasagna!

This may sound like a silly question, but I am new to cooking zucchini (or eating it for that matter), but about how long should it take to cook? I got all the stuff to make it, and want to have it with dinner tomorrow night if possible. Thanks!!
I think it takes about 15-20 minutes. It also depends on how crunchy you want them or how soft. Just keep checking on them and your kitchen will also start to smell good when they are close to being ready

Thanks for this recipe - I might dip my slices in melted butter first instead of the butter pats. I do a chicken wings recipe a bit like this but never thought of doing it with zucchini.
