I wouldn't take a chance on it. Everything that we usually ferment - yogurt, pickles, beer, etc - is done at room temperature. I'd have to assume that the bacteria/fungi/etc that take off at refrigerator temps is bad news.
Safely-fermented coconut milk would probably be really tasty, though. I made coconut yogurt a while back and it was quite good.
